What's in the box
Each medley contains up to four varieties drawn from current harvest, which changes with the season. You might find:
Chestnut — deep orange caps with white speckles, rich nutty flavour with a peppery finish. Outstanding in risotto and pasta.
Golden Enoki — long golden stems and petite caps, delicate and slightly fruity. Beautiful in broths, salads, and ramen.
Pioppino — firm, meaty clusters with a deep earthy flavour. The Italian kitchen staple. Made for slow braises and pasta sauces.
Shimofuri — dark caps on thick stems, mild and savoury with a dense texture that handles heat exceptionally well.
Shiitake — intensely umami with smoky depth. One of the most versatile culinary mushrooms in the world, extraordinary when fresh.
Oysters (various) — silky, delicate, fast-cooking. Pearl, Blue Shimeji, and other seasonal varieties.
Lion's Mane — when available. Seafood-like, meaty, remarkable when seared in butter.
The current varieties available will be listed in the product notes — they only pack what's at peak freshness on the farm that day.
